I just love this salad and the abundant amounts of Kohlrabi we have on the farm make me want this salad almost everyday.
Kohlrabi is a large bulb with a sweet cabbage-y flavor. It’s crisp and juicy – like a good apple. Shredding your kohlrabi is the easiest way to get it use a lot of kohlrabi fast. Then just mix the rest of the ingredients in this recipe and you have a fresh, unique side to your spring farm to table meals.
This is really a simple salad to make and certainly delicious!
