I was inspired by the big bunch of parsley, which came in my farm share CSA box, to create a gluten free spring tabouleh salad for my family.
Tabouleh usually has cucumber and tomato but I sitck with seasonal ingredients for most of my cooking. Instead, I used the veggies that I recieved in my farm share CSA box. But since tabouleh usually includes mint, I did pick some from my yard to add to the recipe. Hopefully you have mint growing somewhere that you can use.
This is really a simple salad to make and certainly delicious!
