8 oz lettuce, (about 8 C loosely packed)
1-2 cloves garlic
3 T olive oil
1 T balsamic vinegar
salt & pepper

Rinse then thoroughly dry lettuce in salad spinner (or spread leaves on paper towel, roll up, and dry). In food processor, chop garlic. Add lettuce, olive oil, vinegar, and salt and pepper – pulse until leaves are chopped but not liquefied. For more flavor, you may wish to create variations of this by adding hot pepper or herbs (cilantro or basil), capers or olives to processor.

This is delicious by itself,  but it makes a great green sandwich – tomatoes, cheese, and lettuce spread or on sandwich of your choice. It also works with fresh mozzarella, Cheddar, or Jarlsberg. This also makes a great condiment with chicken, pork, or even topped on a burger.
